Meatballs

Preheat oven to 375°

Combine:

  • 1 lb turkey or beef
  • 1 egg
  • ¼ cup milk
  • ½ cup bread crumbs (Italian style)
  • ¼ cup parmesan cheese
  • ½ tspn salt & pepper
  • ½ tspn garlic powder
  • 1 tspn oregano
  • 1 tspn parsley

Bake for 25 minutes

Parmesan Garlic Roasted Red Potoates

Preheat oven to 375°

Combine:

  • 3 lb red potatoes, diced
  • 4 tbn grapeseed oil
  • 3 tsp minced garlic
  • 1.5 tsp sea salt
  • 1 tsp pepper
  • ½ tspn dried oregano
  • ½ tspn dried basil
  • ⅓ cup parmesan cheese

Mix together and spread evenly on a sprayed baking sheet.
Bake 40 minutes, turning potatoes every 10 minutes.

Oat Apple Sauce Muffins

Preheat oven to 375°

Combine:

  • 1 cup oats
  • 1 cup apple sauce, unsweetened
  • ½ cup milk
  • 1 egg
  • 1 tsp vanilla
  • 4 tbsn butter, melted
  • ⅓ cup coconut sugar
  • ¾ cup oat flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • 1 tsp cinnamon
  • ¼ tsp salt

Pour into greased muffin tins, I use olive oil spray.
Bake 15-20 minutes.

Slow Cooker Fajitas

  • 2.5 lb beef or rib roast (or chicken for 4 hrs.)
  • 4 oz green chilies
  • 1.5 bags of frozen mixed peppers & onion
  • 3 tbsn chili powder
  • 3 tsp cumin
  • 2 tsp salt
  • 2 tsp paprika
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp pepper
  • a good squirt of lime juice

Cook the meat, shred and then add veggies.
Cook for 8 hours on high.

Granola

Preheat oven to 300°

Combine:

  • 2 cup oats
  • ⅙ cup oil
  • ¼ cup honey
  • 1 tbsn flaxmeal
  • ½ tsp vanilla
  • ¼ tsp cinamon
  • ½ cup pecans
  • ½ cup almonds
  • ¼ cup sunflour seeds

Mix together for 10 minutes and place on wax paper.
Bake 10 minutes.

Egg Muffins

Preheat oven to 375°

Combine:

  • 10 eggs
  • ⅓ cup milk
  • ¾ cup cheese
  • veggies of your choosing
  • ¼ tsp salt
  • ¼ tsp pepper

Cook for 20 minutes.

Double Chocolate Muffins

Preheat oven to 350°

Combine:

  • ¼ cup cocoa powder
  • 2 tbn oat flour or regular oats that have been blended
  • ½ tsp baking soda
  • ¼ tsp baking powder
  • ¼ tsp salt
  • 2 tbn brown sugar, lightly packed

In a separate bowl, combine:

  • ½ cup creamy peanut butter
  • ¼ cup unsweetened applesauce
  • ¼ cup vanilla greek yogurt
  • 1 tsp vanilla extract
  • 2 tbn honey
  • 1 large egg

Mix together the separate bowls then combine the wet mixture into the dry mixture and mix again. Mix in 5 tbn dark chocolate chips.
Using a muffin tin, spray 9 of the cavities and fill the other 3 halfway with water to ensure they cook evenly. Do not use muffin liners!
Bake 18-22 minutes or until a toothpick comes out clean.

Energy Balls

Combine:

  • 1 cup oats
  • ½ cup flax meal
  • ½ cup chunky peanut butter
  • ½ cup rasins or semi-chocolate chips
  • ⅓ cup honey
  • 1 tspn vanilla

Mix and form into balls, cool for 1 hour in the fridge on a cookie sheet.
